CELEBRATING TERRA MADRE DAY

Pop up Market on Main Douglas Road next to Galvin’s Carry Out Off Licence, is bringing Terra Madre Day 2011 on Saturday 10^thDecember to the community 2pm - 4pm.

This is the third year of Slow Food’s Global day of Action, it is a day to celebrate Slow Living and eating locally.

Come and meet local artisan producers and sample their wonderful produce.

You will have the opportunity to order your Christmas hams and other festive trimmings. There will be signed copies of Darina Allens Forgotten Skills cook book and a very good chance that the author herself may pop in!

Christmas gift ideas ranging from €5 upwards.

There will be a butter making demonstration by Peter Foynes from the Cork Butter Museum.

The Pop Up Market is a joint venture between Mary Jane Russell from Town & Country, Simone Kelly and Trixie Leahy of Interior Living.

The philosophy of the Slow Food Movement is reflected in the careful selection of artisan goods available at the Pop up Market.

Garden Talk with Kitty

Thank you to everyone who made his/her way to Blarney Garden Centre on Tuesday night. Maria & Billy O'Connor of Blarney Garden Centre served lovely homebaked scones and the tea and coffee warmed us up in no time.

You might wonder why having a garden talk in November - it is the best time to start preparing your ground for the next season. As Roy Keane said once: 'Fail to prepare - prepare to fail' - anything right done now will make your life so much easier in the coming months.

Kitty who showed the nation during the Summer how to prepare a garden is as passionate about gardening as one can be. She loves to share her knowledge and passion and she was very generous with her time and expertise. She was very interested to see where people were at their gardening level and we had a great mix of people attending (we still keep our fingers crossed for Margo and her pigs).

The best way of preparing your ground now for the next year is to cut down any weeds you have now, mix in a good manure and cover the ground with black plastic (make sure to put some weight on to avoid it blowing away). The ground is kept warm and the manure has time to rot down and mix in well so that you are left with a wonderful rich soil next year.

We will have a repeat meeting in March where Kitty will show us how to care for seeds, how to grow and what to grow when. Watch this space - the dates will be announced in one of our next newsletters.

Simple White Bread

At our pig feast last May I was asked several times for the recipe of the breads I brought along. To be honest, it is the most simplest recipe you can think of. Use the basic recipe below to create your own versions (my favourites are garlic and roasted onion and sun-dried tomato).

500g strong bread flour, salt (to your tasting), 25g fresh yeast (or 14g dried yeast - 2 sachets), 50ml olive oil.

Mix the flour and salt in a large bowl. In a jug with 300ml lukewarm water, add the yeast and have it dissolve. Leave for a few minutes. Add the olive oil to the yeast water and add to the flour. Use your hands as a claw and start mixing the water with the flour. When it all comes together take the dough out of the bowl and start kneading it on a light floured surface. This works best if you have cleaned your hands of the sticky dough. Normal recipes say to knead for at least 10 mins - I knead until the dough feels springy and nothing sticks to the surface anymore. Put back into the bowl and let rise for about an hour (the colder the room the slower the rise). Knock back the dough and need again. You can form the dough into any shape you like but I use a loaf tin which is lined with baking paper. Bake in a moderate hot oven until the bread is browned and sounds hollow when you knock on the bottom and et voila you have a lovely bread.

If you want to vary the bread - pan-fry some chopped onions and garlic and add it to the flower before adding the water. Or chop up some sun-dried tomatoes (if you use jarred tomatoes, use the oil instead of the olive oil) and add to the flour. Your imagination is the limit...

Bruce MacDonald will take us along an East Cork beach and show us how to find and recognise seaweed, how to pick and store it and of course, what to do with it. Seaweed has been known for generations for their health benefits and Bruce will tell us all about it.

Christmas Craft & Food Fair

It is an indoor Christmas Craft & Food Fair that will take place on Saturday 10th and Sunday 11th December 10am to 7pm.

The venue will be the Former Fas Building, Sullivan's Quay., Cork City

This will be a traditional Christmas fair in the heart of the city with local craft stalls, craft workshops, free kid's crafts & face painting, story telling, music, community stall, wonderful Christmas cakes & puddings & fresh produce & wreaths.

The idea is to compliment the other Christmas festivities taking place in Cork City during December & add variety to the consumers overall Christmas experience.

This Christmas Fair will give customers the opportunity to do all their Christmas shopping under one roof, with a vast array of unique, locally crafted gifts, decorations and food to choose from while having a great family day out.

The event will be organised by The Cork Local Food Producers & Craft Group whose aim is promote and showcase the vast amount of small local producers and talented craftspeople we have in our midst. We are always interested in new Irish Food companies and while searching for some news, we found Just Nuts.

Just Nuts is a new Irish owned and Irish run artisan food company specializing in the highest quality aromatic roasted nuts and other nut products.

It was set up by entrepreneur Fiona Buckley in early 2011 who decided to fulfil her passion for cooking. The idea for Just Nuts came about when Fiona noticed that the kind of nuts she was making for parties with friends and family were not available anywhere in stores, delis or markets.

Her products are fantastic to eat as they are. The savoury nuts are lovely sprinkled over salads, in curries, even over omelettes while the sweet varieties are great in cakes, desserts with ice cream. Monica Murphy and Febvre Wines are hosting an extremely interesting Slow Food special, a wine tasting at Monica's house next Wednesday night, 19th October.

The De Martino family from Maipo Valley in Chile have just recently launched a brand new Organic Wine range called Nuevo Mundo. Sebastian De Martino and his extremely impressive winemaker Marcelo Retamal will be showing not only their new Nuevo Mundo range but also some of their Reserva wines and serious single vineyard specialities. Marcelo is at the forefront of Chilean viticultural and winemaking research and has built up an incredible collection of vineyards all over Chile to produce the best varieties suited to the best locations. They have won the Chilean Trophy in the International Wine Challenge among dozens of other awards.

Both gentlemen will be present to talk you through a wide selection of their wines.

Monica will provide a tasty supper for all. Tickets will be €20 for members of Slow Food and €25 for non-members, to include all food and wines but if you join Slow Food on the night, you only pay member's fee. Book early as space will be at a premium.

Pig Feast at Shournagh Valley Farm

The weather was holding up last Saturday when we visited Shournagh Valley Farm where Ken& Frances Mitchell

showed us around their organic pig farm and allotments. It was windy but at least dry. Ken is rearing his own pigs and sells them to local businesses (Waterloo Inn Restaurant being one of them) and of course to Slowfood..... Ken is an all-rounder as there seems to be nothing he wouldn't put his mind or hands to it. He built the spit roast himself, having the heat coming from the sides rather than from beneath. He and Francis got up early that day to make sure that the pig will be ready, moist and succulent for the pig feast. Francis had the duty of basting the pig regularly and let's say, the pig was so succulent that people were bagging some leftovers to take home

The tour of the farm started at the pig run where he 'introduced' his 2 sows and the 'man'. He explained how he keeps them and seeing them being happy out and about and absolutely not shy at all, showed that this is pig farming as it should be.

To prove that he is a Jack of all Trades, he started to develop a wildlife pond at the bottom of his farm where he hopes to be able to farm some rainbow trout for his own consumption - a pity for all keen anglers (but I can see another Slowfood event coming up here). It looks already very idyllic and I can imagine how it will look in a few months time.

The tour lead us then to the allotments of the farm. There are currently 14 allotment holders but Ken & Francis still have room for more. It is not too late to start the allotments in May as garden centers offer already established plants that will make it easy to grow your own vegetables. Being part of an allotment group also means that you can learn from a combined experience and swap vegetables. The group also comes together to celebrate their harvest etc. Please contact Francis on shournaghvalleyallotments@live.ie if you are interested in becoming part of the allotment movement.

But of course, the highlight of the day was the pig feast at the end of the tour - the pig looked amazing on the spit and you could hear the crackling before you saw it. It took 2 people (thanks Terence for your help) to get the pig from the spit and everyone started to queue as everyone wanted some

of the crackling. Green salad from my own garden with homemade dressing (Terence - again thanks for the dressing)

a mushroom quiche, potato salad and 3 different breads - all homemade of course- completed a meal that could truly be
called a Feast. The homemade cider that Ken offered warmed us from the inside and we all watched the rain pouring down - we were nicely sheltered and enjoyed the company of like minded foodies.... enjoy the photos below and thank you to Ken & Francis for being amazing hosts and for a wonderful day at their farm.

Interested in growing your own food this year? GIY Week (March 12^th to 19^th) is the moment you have been waiting for! GIY is a not-for-profit organisation which started in Ireland, that aims to make home-grown food the norm – during GIY Week the organisation is trying to encourage people that have never grown anything at all to sow a seed for the first time. Whether you would like to be self-sufficient or just want to grow some herbs and salads on a windowsill, GIY wants you get growing!

GIY Week 2011 is timed to coincide with the start of the 2011 growing season - GIY groups around Ireland will be hosting events, demos and meitheals to provide would-be GIYers with the skills that they need to grow their own successfully. On Facebook, GIY plans to get over 100,000 people to take a pledge to grow something they can eat (www.facebook.com/giyireland).

To mark GIY Week, GIY patrons such as Clodagh McKenna, Ella McSweeney, Klaus Laitenberger and Joy Larkcom are all hosting events. There will be expert web-chats each evening on the GIY website; a "meitheal Mor" in Seven Oaks Community Garden in Dublin; yoga for GIYers in Darthmouth Sq in Dublin; new GIY group launches in Offaly, Drumcondra, Leitrim and Donegal (including the first off-shore GIY group at Árainn Mhór). GIY will also be at the Inish Food Event in Donegal (organised by the Irish Food Bloggers and Harry's Restaurant supremo Donal Doherty) and the Potato Day in The Organic Centre, Rossinver, Leitrim. There will also be visits to some of Ireland’s most inspiring vegetable gardens, including Mount Congrieve in Waterford and the OPW’s Victorian Walled Garden in the Phoenix Park. A day at the farm

Caroline & Eddie Robinson were our hosts last Sunday at their farm in Templemartin. We could not have asked for nicer more welcoming hosts - we even didn't bother about the wet weather.

We all were clever enough to have weatherproof clothing (I even bought new wellingtons) and after a short introduction to Caroline and Eddie's background, we started our tour. Eddie explained the tools and their uses and how to prepare the ground - he also gave great tips on how to make the hard work easier.

Caroline then took over and explained how to handle seeds and compost. She explained how to store, plant and take care of the seeds. She has a great setup and we all got great hints and tips. We then moved on to the polytunnels - although they were mostly empty it was easy to imagine how they look full of wonderful fragrant plants. Eddie is also very inventive when it comes to customize tools. Caroline explains how to plant the seedlings and how to take care of them.

Having our gardening minds excited, Eddie took us on a walk through the outdoor fields. He is a great believer of rotation the crop every year and leaving fields empty and cover them with clover to make sure that all the nutritions are returned to the earth.

We ended the day with a lovely cup of tea/coffee and some homemade cakes.

Grow your own - event

Your committee has been busy organising some great events for you. We are
starting the year off in February with a trip to Caroline Robinson's farm in
Templemartin (directions will be giving at the time of booking). Caroline is
well known for her passion of gardening/farming and all things organic. She
has started the farmer's market in Cork City a few years back and it has
grown steadily ever since (located currently at Emmet Place opposite the
Opera House). She is also involved in the Cork Free Choice Consumer Group
with Myrthe Allen. She gives regular talks about 'Grow your Own' and organic
farming.

Caroline has invited us to visit her at her farm on Sunday, 20th February at
2pm. She will show us how to grow our own, no matter how big or small the
space is you have. She will give tips and tricks to get us all in the mood
for starting our own kitchen garden.
_Learn how to start a garden, plan a rotation, care for the soil, make
compost, sow seeds, transplant seedlings, use tools and polytunnels etc.
This is a beginners workshop but I am sure that even the more experienced
gardeners will get some useful tips.

Price for this event is €15 for members and €20 for no-members. Tea/Coffee

TERRA MADRE 2010 EVENT

To celebrate Terra Madre Day, Killavullen Farmers Market is hosting a “Meet your Local Producers” market. Kitty Scully, the Horticulturlist Presenter from the RTE1 show Corrigan Cooks Naturally will give an introduction to the Slow Food philosophy and Terra Madre vision before leading a guided walk of this unique atmospheric market which is held in a polytunnel on the stunning grounds of the Nano Nagle Centre. Participants will have a chance to meet and chat with their local artisanal food producers and crafts people and sample some of the wonderful local seasonal produce that is available in their locality. The event is free of charge and first talk and tour will start at 11.15am.

We will be at Eve's Chocolate Shop in Magazine Road (off Dennehy's Cross), on Saturday 11th December from 6pm - so you can rest your tired feet after the Christmas Shopping. You can browse around the beautiful decorated Chocolate shop and maybe even getting some late treats in.

Blind Tasting in Augustine's

Brendan Cashman was our host yesterday in Augustine's for a fantastic blind food tasting. Our members and friends were treated to a 8 course tasting menu which they ate blindfolded. The idea behind tasting food blindfolded is simply to REALLY taste the food. Normally we eat more with our eyes than our other senses. Smell, texture and taste had to be combined to guess what was eaten. And it was amazing how right some people were and how wrong others....beef became boar, plum became a peach and pheasant became pork. One common 'sense' was that the food was simply outstanding. As I was 'overseeing' the event, I can ensure everyone that the food also looked simply amazing.

Frank, the restaurant manager, looked very well after us by being at hand to answer question about the food and wine. His knowledge about the food served was in depth and every question was answered.

The tasting menu sounds as mouthwatering as the food was....

1. Amouse Bouche - Gazpacho
2. Salmon tartare served with puy lentils and capers, topped with a quail egg
3. Pheasant Terrine with celeriac mash
4. White Vegetable soup with truffle
5. Beef Bourguignon served with wholegrain mustard mash
6. Ardsallagh Goats Cheese with grilled plum
7. Mixed Autumn Berry Mousse
8. Warm aromatic chocolate soup

Pay Augustine's a visit, it is worth it. Brendan had already a few visits from the Michelin inspectors....hopefully he will be able to bring a star to Cork. He very well deserves it.

Seasonal Recipes for Cork's Slow Foodies

Pamela Kelly, head chef in Nash 19, is not only a wonderful chef but also a great supporter of Slow Food. She has agreed to give us some of her yummy recipes for all of you to try. Let us know when you have cooked it and what you thought....looking forward to the next recipe already...

Golden beetroot, Ardsallagh goats cheese and roast red onion fritatta

This will feed 6 people and fits into a standard frying pan

700g Cooked beetroot ( Golden, purple, candy striped, up to you)
6 eggs
250ml cream
2 sprigs of thyme or 1 of rosemary
4 medium onions
Salt and Pepper
350g soft goats cheese

Cook beetroot, whole, unpeeled in a steamer for about 50 mins until it's tender.
Then peel it, and slice about 5mm thick, put aside
Peel and cut the onions into eighths, lay them on a baking tray.
Drizzle with olive oil and season with salt. pepper and chopped herbs.
Roast in the oven at 180 C for 10-12 mins.
Line your pan with greaseproof paper
Begin to layer up your fritatta by covering the base with half the beetroot, half the red onion and half the cheese.
Repeat the process.
Lightly whisk the eggs and cream together.
Pop into the preheated oven for 30 to 35 mins until the egg is just set.
Serve with a big salad and a tangy chutney to complement the cheese.

Augustine's is one of the best known restaurants in Cork. Located in the Clarion Hotel in Lapp's Quay, it was named one of the 10 top restaurants in Munster and has been nominated by Food & Wine.

Brendan Cashman is famous for his love of local and seasonal food and sources most of his ingredients from the English Market and trusted local suppliers.

To celebrate autumn and the richness of produce available now, we have teamed up with Augustine's to bring you a new experience in fine dining.

You are invited to experience the tasting menu for which Augustine's is famous for. This menu consists of 6 courses - but there is a twist - you will be tasting the food blind folded. This will give you a new sensation as all your senses but your eyes need to be engaged. A glass of wine is included. After tasting each course, we will be discussing the food with the chef and sommelier. Questions are always welcome.

This is a fantastic opportunity to visit one of Munster's best restaurants and to taste a wide range of dishes.

Beer Tasting in the Abbott Ale House

Barry Fitzgerald was our host last night for the first beer tasting - and hopefully not the last one. Barry's knowledge of beer, methods of brewing and all gossip involved is second to none. He was very generous and offered 15 beers from around the globe to taste (no worries, it was a tasting and not a drinking session). He was even able to match the beer with food....ever tried German Weizen with banana bread - you might be surprised. We also served smoked cheese, sourdough bread, salami, cheesecake (and I am not joking), mushroom bites. Please see below the list of beers we tasted last night:

Terence, the barman was quick to replace the glasses and all went smoothly. We also almost finished on time. Thank you again to Barry and Terence for a great night.

This year's summer was an amazing affair, we were able to sit outside
- al fresco at its finest - sip beer, prosecco and nibble away while
sunrays warmed us. The evenings are getting cooler now but we are
still in the beer garden mood so we thought that a beer tasting
experience is called for before the seasons really change.

Slow Food Cork City is inviting you to a beer tasting in the Abbott
Ale House on Thursday, 9th September at 6:30pm.

Barry Fitzgerald will be our host for the night. He is well known in
the beer world as he managed a supply service for beer which he
sourced worldwide as well as running the Abbott Ale House. He is
committed to Slow Food and the focus on the night will be on Trappist
beer (this is a beer brewed by or under control of Trappist monks).
The traditional brewing method of the Trappist beer is akin to the
Slow Food motto of local produce, traditional methods and quality. He
will also introduce us to some Irish beer.
With each beer you will be served interesting (and sometimes
unexpected!) finger food to match.

Barry will share his extensive knowledge with us and will welcome any
questions you might have. The Abbott Ale House is a 'Mecca' for beer
lovers as it stocks beers from around the world and you can get lost
in the variety. The upstairs pub - where we will have our tasting - is
as quirky as it gets and a relaxed atmosphere will guarantee a great
event.

Mystery Dining came to Cork....

... and we all had a great time.

We started off at 6pm in Interior Living in McCurtain Street where everyone was greeted with a glass of Prosecco. Simone and Trixie have created a haven in the middle of a busy street and we all felt right at home.

But duty called and we all started to march towards Bridge Street and of course, it dawned the first few people that we were heading to Star Anise. Virginie Sarrazin and Remy Vasseur opened Star Anise about 8 years ago and it went from strength to strength. They pride themselves to source as much of their produce locally and take special care when preparing the food they are famous for. We had a wonderful selection of starters to choose from Polenta & Sage crusted brie with walnut pesto and red pepper jam, summer salad of ham hock with broad beans, red onions, Kim Shandon's organic rocket and parmesan. For wine options we were offered Heart of Stone Sauvignon Blanc 2009, Candidato Bianco Viura 2008, Stormy Cape Shiraz 2008 and Candidato Tempranillo Castilla 2008. A great start to the night. From there we were heading towards the oldest restaurant in Cork - our member Miriam guessed right that we were going to Jacques. Jacques - as Simone - have been involved with Slow Food Cork City from the beginning and it was a great idea to join forces for this event. Jacques has never been off the radar as they have a faithful following amongst their customers. The restaurant opened the doors 25 years ago and have established a trusted relationship with their suppliers and producers which is mirrored in the food. We had the hard choice between fresh hake tagine, free range chicken with Dave Barry's beetroot and grated horse radish, Michael Bresnan's lambs liver with spinach, raisins, pinenuts and sherry and organic spinach & Ardsallagh goats cheese and almond cannelloni.....thumbs up for each dish as the face simply lit up with delight. Leaving Jaques, we made a small walk to Club Brasserie were we were greeted by Beth. This is the second venture of Beth and Harold Haughton who are well known for their restaurant Citrus in Douglas. Harold is known for his commitment to quality and ingredients are sourced locally as much as possible. The dessert menu on offer included Angel Pie, Chocolate Brownie, Rhubarb crumble, Creme Brulee, Tarte Tatin, Eton Mess and a wonderful plate of selected Irish cheeses. We would like to thank all restaurants involved for their support, generosity and great food. Everyone enjoyed themselves and the chatter at the tables were proof that food is the best way of making new friends - Deirdre and myself definitely have.

Mystery Dining is coming to Cork

Slowfood Cork City has teamed up with some of the best restaurants in Cork to offer our members great food in relaxed surroundings. The chosen restaurants are well known for their support of local producers and growers and their creativity to create amazing dishes.

The evening will start of at 6pm on Tuesday 13th July with a lovely glass of bubbles at Interior Living in MacCurtain Street. Simone Kelly will welcome us in her shop which is a treasure chest full of exciting furniture, giftware and a larder with lots of foodie goodies. Slow Food members will remember Simone as the previous convivium leader of Cork City - we are still missing her immensely. Her knowledge about local produce and food is second to none and I am sure she will share her knowledge with you on the night.

From there we will start our mystery tour - and since it is a mystery night, we won't give any more details.

Please note: As the restaurants involved are keeping their tables free for us, we will need confirmed numbers by the 8th July. Upfront payment is necessary (payment can be made at Interior Living by cash or cheque - no credit cards can be accepted). A minimum number is required to make it worthwhile for the restaurants - the event will not go ahead if numbers are not met.

Please wear comfortable shoes as walking between the course is required.

Price for members is €40 and for non-members €45. Included in the price is a 3 course meal with a glass of wine for starter and main course and tea/coffee for dessert.

Cheese & Wine Tasting 'On the Pig's Back'

What a beautiful day it was last Saturday, the sun was shining, the sky was blue and when entering the cafe of Isabelle Sheridan, you could forget that you were in an industrial estate but that you just stepped into a piece of France.

Isabelle was our host for the night and we couldn't have asked for a better or nicer one. Her wonderful staff stayed on to prepare the cheeses for us and added smiles to each plate.

Monica Murphy from LeFebvre is not only an amazing wine expert but also a great entertainer. She has met almost - let's make that everyone - in the food and wine business and she shared some wonderful stories with us.

Isabelle Sheridan is our host on Saturday, 22nd May at 6pm. You all know her stall in the English Market 'On the Pig's back' but did you know that her latest venture is in Douglas? Her cafe with the same name on the premises of the Douglas Woolen Mills is our location for the Cheese @ Wine Tasting. Monica Murphy of LeFebvre is on hand to talk about the cheese and wine and how to match them perfectly. Her knowledge is second to none and it is a rare treat to have her in Cork.

Isabelle will keep her shop open so that you can have a nose around and maybe shop a bit. On the Pig's back is well known for the artisan food produce made in Ireland and France. Her pates are handmade on the premises and have won a fellowship that is the envy of many.

Grandmother's Day in Hosfords

Slow Food's Annual Grandmother's Day took place across Ireland last Sunday. Cork City joined forces with West Cork and invited Grandmothers, Grandfathers, Grandchildren, Mummies and Daddies along. We had a fantastic turnout and the kids had lots of fun baking fairy cakes and brown bread with Mary and Christine from the Ballinascarthy Bakers and it was a joy to watch them marching into the kitchen of the Geranium Cafe where headchef Olive opened the oven for the little master bakers.

Peter Foyne from the Butter Museum in Cork City came and showed how to make butter in a jar as well as in a large kiln jar with a wooden whisk. I managed to snatch some of the butter up and let me tell you it was yummy with the brown bread.

John Hosford of Hosford's Garden Centre showed our guests how to start your own kitchen garden and the gathering around him showed that the interest is higher than ever to grow your own food.

Anthony Creswell from Ummera Smokehouse showed how to smoke bacon in a small home smoking tin but also explained how to smoke just using an old cake tin.

Dianne Curtin of West Cork Slow Food showed the kids how to make lemonade yourself and the kids simply loved it, they couldn't get enough of the sparkling juice and she had to repeat the recipe three times to be sure that everyone got a sip of the lemonade.

Olive Brennan offered a scrumptious afternoon tea with sandwiches and cakes which went down a treat.

Thank you to all involved helping to make this day so special. A special thank you to John Hosford who so generously opened his garden centre for us.

A Sugarloaf Scoop! First time for a pudding tasting.

Deal is that two more pigs have a contract out on them and are in all probability not gonna see Monday of next week, hence the short notice! So fresh pudds... An organolaptic indulgent adventure mid week..... a mini event. (Wednesday 14th April at 7:30pm)

Unctuous and Under Threat... or … Pride in our Puddings!

Slow Food Ireland are currently working on a Presidium for traditional Irish puddings, when this is established there will be a measure of protection afforded to these delightful, unique, age old and nutritious Irish foods.

With this in mind, The Sugarloaf Club is thrilled to invite you to an organoleptic tasting and exploration of this fast disappearing gem, to let us all know what we will be missing unless we can get the protection in place.

Both black and white puddings will be made using only freshly prepared local, pork, offal, some oats, barley and of course some fresh blood! There will be no preservatives, colourings, artificial flavourings,

On the night we will get to taste and rank each of the puddings, and all of the data collected will be forwarded on to the National body as part of the project. You will be asked to evaluate and score the various sensory attributes and compare this with an industrially produced version. We will also post the results on our blogsite.

At the end of the tasting we will each get 1 ring of Black and 1 ring of White to bring away and share with others and impart our new found knowledge!!! These will keep for a full ten days chilled, but are at their most fantastic if eaten within 3!

Grandmother's Day 2010

We are delighted to announce Grandmother's Day 2010 which will take place on Sunday, 25th April at Hosford's Garden Centre. In corporation with Slow Food West Cork, we will be celebrating Grandmothers, their wisdom, their knowledge and of course their recipes.

Come along to a day filled with fun, music and workshops. Ballinascarthy Bakers will bake fairy cakes and hopefully some soda bread, we also have lined up some amazing people to show us how to make homemade lemonade, chocolates and fudge. Children are more than welcome to get their little hands stuck in. Workshops will start at 1pm

A great competition is also taking place. We are inviting grandkids to bring along a recipe from their grandmother and write it down themselves and paint a picture showing the result. Dianne Curtin (food writer and chef) and Ruth Healy (of Urru) will judge and a great prize awaits the winner. So, go and get to nana's recipe collection.

Olive Brennan, head chef of the Geranium Cafe, will have old-fashioned afternoon tea on offer with little sandwiches and cakes from 3pm onwards.

No need to book - just come along and enjoy the day - and don't forget to bring nana with you.

Butter Museum Event

The butter museum was the place to be yesterday as Peter Foynes invited Slow Food to learn all there is about butter making and the important part butter has played in the commercial past of Cork. He treated us to a tour around the museum and his knowledge was so impressive that everyone attending was hooked from the start.

The entire ground-floor gallery displays traditional butter-making equipment. The development of the dairy industry in the twentieth century is also explored and the story is brought completely up-to-date with an audio-visual presentation on the industry since the early 1960’s. Throughout the Museum the displays are enhanced by clear and informative panels covering all aspects of the dairy culture in Ireland.

A gallery in the Museum is dedicated to the culture of cattle and dairying in Early Ireland. In this society, cows were not simply a source of valuable foods, such as butter and cheese, but also the measure of wealth and standing. The gallery features a keg of thousand-year-old butter and accompanying panels on the food and society in the Ireland of Saints and Scholars.

John then showed us on a Russian Separator how to separate milk into skimmed milk and cream. The cream will be used to make the famous Irish butter. John has been in the trade for a long long time and has travelled intensively to bring the art of butter making to the masses.

We then settled for some nice tea and coffee, enjoyed homemade scones and jam and tasted handmade butter which was made by Peter and his friends. We were treated to 6% salted sour cream butter, 12% salted sour cream butter and unsalted butter. It tasted all yummy but my personal favourite was the 6% butter which was rich, had a lovely tang to it but was not oversalted.

Mrs Logan was the winner of our annual hamper which included an apron from Clodagh McKenna, a Slow Food bag, chocolate treats from Eve's Chocolates and lots of other bits and bobs.

We're delighted to announce our evening at the Cork Butter Museum on Tuesday March 30th. Due to flood damage at the museum, we had to previously cancel this event. Fortunately the museum is back up and running now!

The event will start at 6.30pm

The evening includes a tour of the Museum and a demonstration of milk separation using a Soviet made electric separating machine., as well as some refreshments.

Wine Tasting in The Wine Buff

Barry Acheson of The Wine Buff in Cork City invited Slow Food members and friends to a wine tasting in his shop in Washington Street. This shop has been decorated with love for detail and it is inviting and cosy - so the perfect setting for our wine tasting. In addition to the wines, Barry also served plates of cold meats, salami, ham, chorizo and pates and homemade breads. Simone Kelly of Interior Living sponsored some amazing olive oil called Primo from Frantoi Cutrera. The olive oil can also be bought at Interior Living in McCurtain Street, Cork.

We had 6 wines - 3 whites & 3 reds - and if you think it was a small selection....think again as it was the quality of the selection that made this tasting so special. Below is the list of wines we have tasted:

Wine Tasting at The Wine Buff

Barry of The Wine Buff has invited Slow Food for a wine tasting on Friday, 25th September. The Wine Buff is located in Washington Street in Cork City. Lovely bread and cold meats are served to clean the palate in between.

Start time is at 7:45. Barry will supply us with several wines from around the globe and will share his extensive knowledge with us.

Costs for members €15, non members €25.

Hydro Farm Banquet in August

Chris' Report of the Long Table Banquet @ the Hydro farm 15^th August

The day started at approximately seven in the morning with the picking and gathering of fresh vegetables and herbs from the allotment. These included broad beans, runner beans, basil, flat leaf parsley, mint, cauliflower, chives, yellow courgettes, strawberries, potatoes and tomatoes of all shapes and colours, red onions, shallots and garlic. The weather was slightly cloudy but not enough to deter the team from prepping the vegetables outside. The size of the team for the day was 7 in total. These included the two organisers Chris and Maeve, Flo, Shane, Kathleen (Chris’s mum) and Caz and Deirdre from Slow food. The allotment owner Zwena and her son Peter helped out prior to the arrival of the 56 guests.

The first of the guests along with the sunshine arrived at approximately 1 o clock and everyone was treated to elderflower cordial (made from elderflowers picked from trees around the allotment) and sparkling wine cocktails with strawberries. Platters of canapés soon followed, these included roast beetroot hummus on char grilled sour dough and char grilled yellow courgettes and smoked salmon, crème fraiche on blinis with fresh herbs. Every platter came back empty so they seemed to go down well. Guests then had time to wander around the 40 allotment plots which also includes a very colourful pumpkin patch.

The barn were the banquet was to take place was decorated with old farm equipment, large artichoke plants that had purple flowers on them, bunches of plated onions from the allotment and baskets of produce. The bread basket was a huge wicker laundry basket that had been used years ago in the Hydro farm hotel. The table was set with white table cloths and dotted with jugs of elderflower cordial with lemon and silver buckets full with a range of hydrangea flowers.

The meal commenced around half two. The first course was a choice of ham hok terrine with allotment piccalilli and salad leaves and spinach and potato tart with char grilled courgettes and parsley pesto.

Next up was the main course which was a buffet of which the visual highlight were the salads made from produce from the allotment. There was also a choice of meats-barbecued morrocon style leg of lamb with tzatziki, combination of roast piglet on a spit (over a real fire) and slow roasted pork belly in a thyme, garlic and white wine reduction with a spicy plum and rhubarb relish. All meats were supplied by O’Flynns butchers in Cork city. The bread was also supplied by Arbutus bread. The two salads that went down really well were the char grilled cauliflower with spinach, tomato and capers in a mustardy dressing and the roast butternut squash, red onion, puy lentil and feta salad.

At this point the sunshine started to cover the entire inside of the barn and everyone needed their sunglasses which really added to the atmosphere.

The next course was the cheeseboard (Gubeen extra mature smoked, Ardsallagh goats cheese with honey and walnuts and Hegartys cheese) with crackers and fig and walnut chutney.

Then finally the dessert buffet, this was a choice from a number of tarts -apple and lemon curd, pear and almond and apple, cinnamon and custard. These were accompanied by Cork Coffee Roaster coffee and Barrys tea (of course).

The entire meal was backed up with music played by a stringed trio called dynamic.

The last of the guests left around nine o’ clock. I think it was safe to say that everyone had a brilliant time and also left with a very positive experience from produce grown in an allotment and also produce from the county of Cork.

The highlight for the organisers was the feedback from one of the guests. It was from a lady called Anne who owns an allotment plot up in Blarney. The next day she told the owner Zwena that it was one of the most beautiful days of her life. Money can just not buy that.

The organisers would also like to thank everyone for supporting the day, slow food Cork city for helping to advertise the event along with the helpers on the day and suppliers of some of the ingredients. A huge thank you also goes to the owner of the allotments Zwena.

25th September - Wine Tasting at The Wine Buff

Barry Achson is welcoming us to his wine shop in 4 Washington Street for a lovely wine tasting. Barry will select some interesting wines for us and we will enjoy some cold meats, homemade breads etc. You all will be handed a printout of the wines so that you can make notes to take home - and to use as reference for your next shopping trip to the Wine Buff :-) The event will kick of at 7:30pm. We are looking forward seeing you at the event. Price for members is €15, non members €20 (it pays to be a member - click here to join Slow Food).

11th October - Mushroom Hunting

We are delighted that Seamus O'Connell of Ivory Tower has agreed to take us on a mushroom hunt. Seamus is foraging himself for quite some time and we will be able to learn about mushrooms, how to spot them and most importantly which one to eat. Seamus will also prepare a lovely meal for us with the 'treasures' we collected. We are still organising some details for this event, so watch this space for updates. Caz will of course send an email closer to the time.

6th November - Slow Film Night

And again, the Film Festival Cork has arranged for a Slow Film Event and we can't wait. We are still negotiating the location and food served so keep this day free in your diary. Email will be send out very soon - make sure you book your place as this event is normally very quickly booked out.

19th November - Thanksgiving Dinner

Okay, we need your help here. Caz and myself have been approach at the Gort Na Nain event if we could organise a Thanksgiving event. Slow Food has been approached by the Cornstore and we came up with the idea of a Thanksgiving dinner. Can you please - either by comment on this blog or via email to Caz ccslowfood@gmail.com - if you are interested in attending a Thanksgiving Dinner? We would need to know quite quickly as to confirm to the restaurant if we are going ahead or not.

11th December - Christmas Cheer

Christmas is normally a stressful time for most people so we thought, we try to bring some 'soft joy' to our members. Peter Foyne from the Butter Museum is opening its doors for us. He will show us around the museum and tell us all about the history of the butter trade in Cork, with a bit of luck we might be able to make our own butter (depends on a lot of factors). After the tour we will sit around a Christmas tree to enjoy some homemade mincepies and mulled wine. I am trying to get a musician to play some carols for us (or with us :-) . More information to follow.

Allotment Day with Chris

Chris Brack is a member of Slowfood who is organising a great event at his allotment on Hydro Farm in Tower (proper directions will be given at booking). The owner of the Hydro Farm has divided part of her farm into allotments and the holders have grown to a tight group of gardeners with swap days, open days etc.

Slowfood Cork City is supporting this initiative of Chris and we are excited about this opportunity for our members to go and see how 'easy' it is to grow your own. Chris and the other allotment holders will be at hand to show you around and answer any question you might have.

A big feast will be served - prepared and cooked by Chris himself using produce from the allotment. Local producers are supporting the event such as O'Flynn Brothers in Cork sponsoring a piglet. Chris is also the winner of this year's Grow.Bake.Cook Competition and I am sure we haven't seen the last of it.

Gort Na Nain - What a day

Lucy Stewart and Ultan Walsh opened the gates to their farm last Saturday and gave us Slow Food Members and Friends an amazing time. It seemed a day just made for us - the sun was shining and Ultan who had been bitten by a 'few' bees the day before was in good shape again :-)

We followed Ultan along this farm and listened very carefully to his stories, explanations and I think I speak for all of us that Ultan's sense of humour is affectionate. We learned how he and his partner Lucy started the farm 5 years ago and what they had done in the meantime - which is an amazing story in itself as most of the work is still done by hand by Ultan and Lucy (they have a help once a week). Even the weeding is done by hand as Gort Na Nain is free of any chemicals.

We were offered samples of the most yummiest orange cherry tomatoes, cucumber and I even 'won' an aubergine which I 'recognised' as beetroot (to my defense, the leaves look quite similar).

After we returned to the farm house - which looks quite 'old' but has been build by Ultan and Lucy - we were treated to a lunch that exceeded my expectations (but it shouldn't have been a surprise as even Denis Cotter is using Ultan and Lucy's recipes in his latest book). The table was bending under the weight of the food, quiches, homemade sourdough bread, salads etc - and that was followed by cakes and muffins. The food was made with their own produce - even the jam was homemade for the sponge and I was not the only one with a big smile on my face.

We only left the farm and the hospitality of Gort Na Nain with great hesitation as we were made so welcome.

Lucy and Ultan are great hosts and their generosity was only surpassed by the warmth and humour they showed us on a perfect sunny day. Our thanks goes out to Lucy and Ultan.

Half the proceedings of the day will be donated to the charity KOST (Knocknamanagh Old School Tracton) which is supported by Ultan and Lucy. Gort Na Nain

I bet all of you know Cafe Paradiso and Denis Cotter - if so, you will have eaten vegetables from Ultan Walsh's farm Gort Na Nain.

Our next event will bring us to Kinsale where his farm is located (driving instructions will be given when booking). On Saturday 20th June Ultan will show us around his farm where we will be able to see unusual vegetables and how he grows them organically (you might want to have a look at Denis Cotter's latest cookbook which is based on Ultan's farm).Ultan will tell us all about his start as a farmer and the challenges he faced going organic. Questions are of course more than welcome and we will also be treated to a lovely lunch.

As the farm is very busy - especially around this time of the year - we need to start quite early with our tour and will meet at the farm at 11:30 (parking is provided for).

Slow Food Festival in Lisdoonvarna

Wow, what a weekend. The weather wasn't sure what it wanted but we were lucky enough that all events were indoors. We arrived Saturday morning - the event started actually Friday afternoon with a keynote from John McKenna about the consumption with a conscience. Several other local businesses were part of this event with Sarah Malone from Slow Food Clare, Carol Gleeson from Burren Connect etc.

Several local restaurants offered reduced prices for evening meals.

Darina Allen opened the festival Saturday morning with a speech that very much emphasised that institutions as prisons, hospitals etc should make a conscious decision to buy more local/Irish produce to support the economy.

Clodagh McKenna was supposed to have the first cooking demonstration but she cancelled, Darina herself stepped in. Enda Conneely (chef and owner of Fisherman's Cottage on Inis Oirr) had also cancelled due to illness. Instead of Enda, we were able to watch Donnagh Gregson from the Bunratty Cookery School cooking some amazing mussels etc.

Dianne Curtin showed teenagers how easy it is to make some yummy meatballs and Natasha from Living Foods done some amazing things with chocolate.

The farmer's market was fantastic and the atmosphere was buzzing. We met Thomas Ryan from the Ponaire Coffee Roastery in Limerick (amazing smelling coffee), Irene from the Windy Hill Farm who had cakes, fairy cakes etc on display, Stone Cutter Kitchen had their lovely produce on offer as well.

The same continued the next day with even more people attending. Congratulations to Slow Food Clare for organising this amazing event

Chocolate Day at Eve's - 15th May 2009

The afternoon saw a bright lovely sunshine - gone were the rain and clouds. I bet I was not the only one whose mood was lifted - especially when entering Eve's Chocolate Shop in Magazine Road. A nice bunch turned up and we started with a short overview of Eve's start in the chocolate business. She was trained in the traditional way of chocolatiers in Switzerland before bringing her talent to Cork. She explained the history of chocolate and how it is grown and harvested. It was very interesting to learn about the different chocolates, the methods of roasting and flavouring it and how it is changed into the chocolate we all know and love.

Just a small fact - Ireland is the 3rd biggest consumer of chocolate with 9 kilo per head (yeah, I can say I always achieve the quota).

Eve was able to answer all questions - and there were quite a few, so basically chocolate is good for you (never had any doubt anyway).

Eve lead us then into her workshop where all the magic happens (we all looked very stylish in our coats and hats). She explained all about tempering the chocolate and why this is so important. And then the best part of the evening - we were allowed to mould our own chocolates - owls, beetles, turtles, hearts etc etc, the choice of moulds was almost never ending.

And last but not least we all got a goodybag with samples of chocolates - and of course, nobody needed any excuse to leave the shop with some more chocolate from the shop.

Eve is a very charming and generous lady who shared with us her knowledge and expertise. Thank you very much.

Eve St Leger is opening her doors to her workshop for us on Friday 15th May at 6:30. She will tell us about her beginnings and how her chocolates became such a success before she leaves us into her workshop and shows us how her amazing creations are made. And I am sure that she will let us try some of them.

You will have time to peak around her lovely shop and there will be enough time to fill the shopping basket.

What a great event. Dianne Curtin and Ruth Healy from Slow Food West Cork and myself had so much fun talking to all people - big, tall, small, young, oldish - everyone enjoyed themselves.

Denise from Bushbys Rosscarbery Strawberries showed us how to make the perfect strawberry jam - and although not a jam fan myself.....I had to admit that it was the most delicious jam I have ever tasted - and talked about her granddaughter and how she helps to make the jam at home. Mary from the Ballinascarthy Bakers was the delight of all children as she made scones with them. Everyone was able to stir, add, knead and form scones. A big tray was carried carefully to the kitchen of The Blue Geranium Cafe where they were baked until golden brown. Let me ensure you, they tasted as yummy as they looked and Denise's jam was a perfect match. You can meet the Ballinascarthy Bakers Saturdays at the Bandon Farmer's Market.

Bob McCutcheon from the Irish Beekeeper Association brought honey I was willing to kill for. He gave us different types of flavours - whitethorn being my personal favourite. You can buy the honey in the shop of Hosford's garden centre.

Music was delivered by the Commodore Male Voice Choir from Cobh and the 3G's.

The Children's Art Competition was won by Grace Kearney, aged 8 with Ava Punch, aged 5 being runner up. We saw amazing talent within the children and can only hope that they keep at it - who knows, we might had the next Picasso amongst us yesterday.

Thank you to all involved incl. Hosford for their hospitality, the Commodore Mail Voice choir, The 3 G's and last but not least to Nick, our camera man who volunteered his Sunday afternoon to catch the moments of our Grandmother's Day. He is now busy to edit the lot and we will burn a DVD of the event. Please let us know if you would like to obtain a copy.

26th April - Grandmother Day. We are joining West Cork. Nick Fawley will bring his camera equiptment and film the event, with hopefully some interviews of the attending grandmothers. We had to join West Cork as the Cork City grannies seem to be very shy.

15th May - Chocolate Event. We are visiting Eve St Leger in her chocolate workshop. She will give a short presentation of the history of chocolate and how she started and will show us then her showroom.

20th June - We are visiting Ultan Walsh at his farm Gort-Na-Nain near Kinsale. He will walk us around his farm and will treat us then to a vegetarian picnic.

August - A day at an allotment. More information on this event to follow.

25th September - Wine Tasting in The Wine Buff in Washington Street. The shop is small but cosy and Barry is a lovely guy who is delighted to get involved with SlowFood.

October - Mushroom hunting. More details to follow later.

Tonight is the Night of the Lamb! Meeting at Urru Culinary Store at 7.30pm, we will go to Dan Maloney's Butchers for a demonstartion and talk about lamb, and then back to Urru for tastings. There are a couple of places left, so contact Ruth Healy at Urru 023 54731 and reserve a place now.

The destination of the final night, March 31st, will be Martin Carey's and the subject for dissection will be poultry and offal.

Beekeeping in Cork

Last night's event was a great success and Eddie O'Sullivan from Cork gave a lovely presentation about bees and the keeping of them. I believe there is nothing Eddie doesn't know about bees and he took the time to answer all questions from the audience. We also had a 'junior' beekeeper amongst us and Eddie was delighted with the fact that new people are getting into the old art of beekeeping again. Below are some photos from the event.

The evening will start in Urru, Bandon and move around to the butchers for butchering demonstrations, instruction on identifying cuts, characteristics, matching cuts to cooking methods and budgeting.

We then move back to Urru for refreshments and discussion on meat issues, traceability, food chain, organic, free range, freezing and recipes.

Slow Food is calling all Grandmothers to participate in Slow Food Grandmother Day on 26th April 2009. We are looking for grandmothers who like to share with us their experience, how they were taught skills, cooking etc by their grandparents and how they pass them on to their grandchildren now.

Bee-Keeping evening

The next Slow Food event will take place on March 11th in An Cruibin. Eddie O'Sullivan is keeping bees for years and in a good year produces up to 1,000 lbs of his delicious honey. His bees forage on nearby sycamore and chestnut trees which gives his honey an amber colour and a more pronounced flavour.

Eddie will talk about his start as a bee keeper and the joy and challenges of producing his own honey. We will have honey to taste and you will be able to blind taste some artisan honey compared to shop bought one. You will be able to take home some recipes based on honey and learn about Irish bees. And of course, we won't let you go home hungry.

Pig Extravaganza in Bandon

Last weekend was a 'piggy' day in Bandon. Slow food West Cork and Cork City hosted a day to support local pig farmers. Avril and Willie from Cahersberg, Frank from West Cork Salamis, Fingal from Gubbeen Smokehouse and others shared their knowledge with the guests in Heron Court Cafe.

Next Sunday, 18th January West Cork and Cork City Convivium come together to bring you 'The Pig Extravangza'.

To celebrate National Pork Weekend our first event of 2009 will centre around one of the longest traditions in Cork. An evening of exciting eating and great chat is planned down west next Sunday, the 18th of January. Speakers include award winning butcher Martin Carey, Willie and Avril Allshire of Caherbeg. Free Range Pork Farm and Rosscarbery Recipes, Frank Krawcykz, salami maker and artisan, Anthony Creswell of Ummera smoked bacon plus guest chefs. A 3-course meal is included. Costs for Slow Food Members €35.

Welcome and a very happy new year to you. This blog will update you in future about upcoming events and activities of the Cork City Slow Food Convivium. The committee consists of 4 people at the moment who spend a fair part of their time to bring you news and to get you in touch with producers and farmers markets. We hope that you enjoy the upcoming events.
