Pig Extravaganza in Bandon

Last weekend was a 'piggy' day in Bandon. Slow food West Cork and Cork City hosted a day to support local pig farmers. Avril and Willie from Cahersberg, Frank from West Cork Salamis, Fingal from Gubbeen Smokehouse and others shared their knowledge with the guests in Heron Court Cafe.
The event was a big success especially for the food that was served. Robbie and Beth cooked a master piece menu:


Amuse Bouche of Pork Rilette on Arbutus Baguette Crossini

Cured Smoked Collar of Pork

Salamis, Crispy Bacon, Warm sausages, warm black & white pudding

Lavender pressed pork belly 7 braised pig tail with quail's egg, sour kraut, celeriac & black truffle puree and wild garlic emulsion

Goarse Flower pannacotta with coconut milk & honey sorbet, poppyseed waffle tuile and lemon curd
